As with all things natural, the food we eat lives and dies. In every stage, ingredients take on new characteristics and as chefs and bakers, we can push and pull at these timelines, encouraging ingredients to slow down, speed up, or pause their maturation and in the process, introduce beautiful, complex flavours that didn’t previously exist.
This supper is our ode to ingredients in every chapter of their lives and our lens through which to observe complexity in all stages of the cycle.
