Honey Nut Granola

Makes ~6 cups

4 cups oats

1/2 cup honey

1/2 cup light olive oil or melted coconut oil

1/4 cup almonds

1/4 cup walnuts

1/4 cup pecans

pinch salt

1 tsp cinnamon

1/2 tsp allspice

Preheat oven to 375°F. Line a large baking tray with a silicone mat or parchment paper.

In a large bowl, whisk honey and oil to combine. Stir in salt, cinnamon and allspice.

Add oats to the mixing bowl with the honey mixture and stir to coat, then transfer this mixture to the prepared baking tray and spread it into an even layer. Bake in the preheated oven for 25-27 minutes until golden brown, stirring every 5 minutes or so to ensure even baking. At the halfway point add the nuts to the baking tray.

Let cool and serve with milk or yogurt and fruit.
