Shaved Salad with Fennel, Celery and Pear

Serves 4-5 people

3 sticks of celery

1 fennel

2 pears

5 small radishes

1 tbsp capers, roughly chopped (optional)

1/3 cup toasted sliced almonds

1/3 cup shaved parm

1 tbsp honey

1 tbsp rice wine vinegar

2 tbsp olive oil

s+p to taste

Slice the celery, fennel, pear and radish very thinly with a mandolin or knife. Toss everything together in a large bowl along with capers, almonds and parm.

Whisk honey, oil and vinegar together in a small bowl. Season with salt and pepper to taste, then pour evenly over salad, tossing to combine.
