Quick Stovetop Granola

Makes 1-2 servings

1/3 cup whole rolled oats

1/4 cup puffed quinoa or rice

1/4 cup pepita seeds

1 tbsp chia seeds

1/4 tsp cinnamon

pinch of salt

1/2 tbsp coconut oil, melted

1/2 tbsp maple syrup (or honey/agave)

nut milk and fruit (like bananas or berries) to serve

Add the oats to a pan over medium-low heat, stirring often until they turn a light golden brown, then mix in the puffed quinoa/rice, pepita seeds, chia seeds, cinnamon and salt, and cook for 1-2 minutes.

Stir in the melted coconut oil and maple syrup. The mixture should start to clump up, cook for 1 minute more then remove from heat.

Either serve immediately with nut milk or yogurt and fruit OR transfer to a parchment lined plate/baking sheet and allow the granola to cool and harden.

Store in an airtight container for up to one week.
