At Alba Cafe in Shoreditch’s Whitechapel Gallery, Alessandro Giannatempo and I created a supper exploring ingredients as they move through stages of growth, decay, and renewal. As chefs, we are interested in exploring how altering these timelines with processes like fermentation and preservation can reveal complex flavours. These suppers are our ode to the beauty of ingredients in every chapter of their lives and the framework through which we analyse sustainability and transformation in the context of food.
